Mini stuffed potatoes

For a potluck for work, I made these mini stuffed potatoes. They were delicious, small bite size goodness, but it was a lot of work and I probably won't do it again with such small potatoes. Maybe bigger potatoes next time.

Ingredients:
potatoes - cut in half
bacon
shredded cheese
miracle whip
green onion
salt
pepper

Directions:
1. bake the potatoes until they are soft.
2. scoop out the insides while reserving the shells
3. mix the potato inside with the rest of the ingredients.
4. scoop the mixture back in the the shells.
5. bake for 5 minutes.
6. enjoy these mini goodness.
