I finally had some extra time at home yesterday to do some baking, so I made a batch of carrot cupcakes. For those of you interested, here is the link for the recipe.
I didn't have any cream cheese to make the frosting, so my cupcakes were a little naked. I quite liked the appearance and the taste of these cupcakes. They were moist and not overly sweet. Plus, they were made from carrots, so that made them cardiac healthy :P The only changes I made to the recipe was I added about 4 tbsp of milk to the batter as I found the batter a little too dry.
